The chef of the restaurant "Kumo" in Hotel Skye Niseko seemed to be so skilled, experienced and seasoned. The grilled minced chicken skewers were so impressing and knocked us out. Potato cakes were also perfect to show the potential of Hokkaido.
Grilled pork skewers with onion are my favorite. The ingredients seemed to be well-selected and processed. The pork was sourced locally as well as the onion. The simple seasoning is one of the most difficult thing and requires high degrees of experience and skills.
The sign of the Hotel "Ki" Niseko has the slices of the wood to show the concept of the hotel. Many silver birches were planted on the premises of the hotel. Ki means wood in Japanese.
